Method of Preparation: 1. Add butter and sugar to kitchen aid fitted with whip attachment. Mix on low speed. 2. Add eggs one at a time, scraping bowl to ensure full incorporation. 3. Melt chocolate. Add to mix and incorporate. Add flour last, and mix until just combined. 4. Bake in the oven at 300 degrees for 15 minutes, turn, and bake for an additional 15 minutes.
Method of Preparation: 1. Split vanilla bean and scrape out seeds. 2. In a sauce pot, bring sugar, vanilla and cream to a light simmer. 3. Add the milk chocolate, mushroom shoyu and stir until fully combined. 4. Stir in bloomed gelatin to dissolve. 5. Strain through a chinois. 6. Refrigerate until set. 7. In the kitchen aid: whisk until fluffy.
Marshmallow Ingredients: 120g Egg Whites 220g Powdered Sugar 1 Pinch of Sea Salt
Method of Preparation: 1. Whip whites till foamy. 2. Add sugar, salt and incorporate with the whisk attachment by hand. 3. Add seasoning or flavoring. 4. Whip on high till stiff peaks. 5. Place mixture into a piping back and pipe onto silicone mat and dehydrate at 135 F until crisp. 6. Char with a blow torch.
Chocolate Crumble Ingredients: 200g Granulated Sugar 250g Almond Flour 150g AP flour 110g Cocoa 5g Salt 125g Melted Butter
Method of Preparation: 1. Combine the dry ingredients, then add the melted butter. 2. Bake at 300 F for 15 minutes until dry.
Graham Cracker Ingredients: 217g AP Flour 217g Whole Wheat Flour 6g Sea Salt 5g Baking Soda 5g Cinnamon 196g Soft Butter 120g Light Brown Sugar 25g Sorghum
Method of Preparation: 1. Mix all dry ingredients (flours, salt, baking powder, cinnamon) in a bowl. 2. Mix butter, brown sugar and sorghum in a mixer with paddle attachment for approx. 5 minutes until pale in color. 3. Add dry ingredients and mix well. 4. If dough seems dry add a few slashes of water until pliable. 5. Divide dough between two large cryovac bags and flatten. 6. Seal on high and roll out until flat and evenly dispersed in the bag, chill 7. Remove from bag and bake on sheet try lined with parchment paper at 325 for approx. 15 minutes or until golden brown.
